Ingredients

Yield:  2 Servings

    • 1/2 cup tri-colored quinoa, rinsed well
    • 1 cup almond milk
    • 3/4 tsp cinnamon
    • 1/2 tsp pure vanilla extract
    • 1/2 cup blueberries
    • 1 red pear
    • 1 pomegranate, seeded
    • Pure maple syrup
    • Slivered almonds

Directions:

    1. In a medium saucepan, bring almond milk, cinnamon, and vanilla to a boil. Add rinsed quinoa; cover and simmer for 10 minutes. Turn off heat and allow quinoa to rest for an additional 10 minutes.
    2. Layer quinoa in a small bowl with pomegranate seeds, blueberries, and pear. Drizzle with maple syrup and sprinkle with almonds.
