- 1/2 cup tri-colored quinoa, rinsed well
- 1 cup almond milk
- 3/4 tsp cinnamon
- 1/2 tsp pure vanilla extract
- 1/2 cup blueberries
- 1 red pear
- 1 pomegranate, seeded
- Pure maple syrup
- Slivered almonds
Directions:
- In a medium saucepan, bring almond milk, cinnamon, and vanilla to a boil. Add rinsed quinoa; cover and simmer for 10 minutes. Turn off heat and allow quinoa to rest for an additional 10 minutes.
- Layer quinoa in a small bowl with pomegranate seeds, blueberries, and pear. Drizzle with maple syrup and sprinkle with almonds.
