cherry glazed chicken with toasted pecans

Ingredients

Yield:  4 Servings

    • 4 boneless skinless chicken breast halves
    • 3/4 cup cherry preserves
    • 1 tsp onion powder
    • 2 oz fontina cheese, thinly sliced
    • 2 Tbsp chopped pecans, toasted

Directions:

    1. Preheat oven to 375 degrees. Place chicken in an ungreased 11X7 baking dish. Top with preserves, sprinkle with onion powder.
    2. Bake, uncovered, 18-22 minutes or until a thermometer reads 165 degrees.
    3. Top with cheese; bake 4-6 minutes longer or until cheese is melted. Sprinkle with pecans.
