Ingredients:

- 2 tsp cornstarch
- 2/3 cup reduced-sodium chicken broth
- 1/4 cup apple juice
- 1 Tbsp butter
- 2 medium apples, thinly sliced
- 2 green onions, sliced
- 1 garlic clove, minced
- 3/4 tsp dried thyme
- 1/2 tsp paprika
- 1/4 tsp each salt and pepper
- 1 pork tenderloin (1 lb), cut into 1 inch slices
Yield: 4 Servings
Directions:
- Preheat broiler. Mix cornstarch, broth, and apple juice. In a nonstick skillet, heat butter over medium-high heat. Add apples, onions, and garlic; cook and stir until apples are crisp-tender. Stir cornstarch mixture and add to pan. Bring to a boil; cook and stir 2 minutes or until thickened.
- Mix seasonings. Pound pork slices with a meat mallet to 1/2 inch thickness; sprinkle both sides with seasonings.
- Place pork on a broiler pan. Broil 3 inches from heat 3-4 minutes on each side or until a thermometer reads 145 degrees. Let stand 5 minutes. Serve with apples.
