turkey and noodle tomato soup

Total Time: 25 Minutes

Ingredients:

  • 1 lb ground turkey
  • 1 envelope onion soup mix
  • 1 pkg (3oz) beef ramen noodles
  • 1 1/2 tsp sugar
  • 3/4 tsp pepper
  • 1/4 tsp salt
  • 1 bottle (46oz) reduced-sodium V8 juice
  • 1 pkg (16oz) frozen mixed vegetables

Yield: 6 Servings

Directions:

  1. In a Dutch oven, cook turkey over medium heat 6-8 minutes or until no longer pink, breaking into crumbles; drain. Stir in soup mix, 1 1/2 tsp seasoning from the ramen noodles, sugar, pepper, and salt. Add V8 juice and vegetables; bring to a boil. Reduce heat; simmer, uncovered, 5 minutes.
  2. Break ramen noodles into small pieces; add to soup. Cook 3-5 minutes longer or until noodles are tender, stirring occasionally.
